"Pici" are typical home-made spaghetti,
with flour, water, salt and very little egg, whose origin
probably dates back to the Etruscans; they are tasted with
different dressings, such as "la briciolata", oil
fried crumbs, the Tuscan meat sauce, or a masterly spicy sauce
with a basis of tomato, paprika and garlic, that is called
"aglione".
The "Pappardelle in Hare Dressing" is a typical
chase dish, that is made with a hare gravy.
The "Fagioli all'Uccelletto" is a dainty dressing
of white beans that are cooked with tomato, garlic, oil and
sage. It can also be an excellent single dish by adding fresh
sausages. "Chianciano Torta" is a typical cake that
is made according to a secret recipe, each Chianciano pastry-cook
jealously keeps.
